Blueberry Peach Cobbler Recipe

This blueberry peach cobbler is a splash of sun-ripened flavor on the taste buds. It’s a delicious dessert worthy of any table.

Y’all, I’m the type of person who looks forward to summer for more than just nice weather. I look forward to fresh, sun-ripened blueberries and peaches almost as much as I do the warmer days and cookouts.

This cobbler recipe is one of the good old-fashioned cobblers that’s just the right amount of two of my favorite summer treats. Blueberries and peaches! If you’re making it out of season, simply use your canned peaches and blueberries or store-bought canned peaches and blueberries. I don’t recommend using frozen, as it adds water to the recipe, changing consistency and making the bake time a little more finicky.

This blueberry peach cobbler is a crowd pleaser! Whether you serve it alone or with a big scoop of vanilla ice cream alongside, you’re sure to enjoy every bite.

INGREDIENTS

  • 1 cup all-purpose flour (unbleached)
  • 1 cup granulated sugar
  • 3/4 cup whole milk
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1/2 stick butter
  • 1 pint peaches or enough fresh peaches to cover (about 2 or 3, depending on size)
  • 1 cup fresh blueberries
  • Brown sugar for sprinkling on top

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Place 9-by-13-inch baking dish in oven with ½ stick butter inside. Allow to heat/melt till you’re ready to pour the batter in.
  3. In a small mixing bowl, mix together flour, sugar, baking soda, milk, and vanilla extract till a batter-like consistency is achieved.
  4. Remove baking dish from oven, and pour batter over the melted butter. Step
  5. Spoon fruit and juice over top of batter till evenly distributed.
  6. Sprinkle in blueberries till evenly distributed. Don’t mix fruits into batter. Batter will rise to cover fruit as it bakes.
  7. Sprinkle brown sugar evenly to desired amount. I like to heavily sprinkle with brown sugar, as it turns into a semi-crunch “Dutch” style topping.
  8. Return baking dish to the preheated oven and bake for 45 to 55 minutes. Allow to cool 10 minutes before serving.
